Spray 4 sheets of pastry with oil and top with another sheet. Cut into 12 even rectangles and spray with oil. Bake at 200 degrees until crisp and golden. Heat 2 tablespoons of brown sugar, 1 tablespoon of butter and 1 teaspoon of vanilla in a pan until melted. Add a cup of fruit and mix. Top rectangles with ice cream or whipped cream and fruit and then cover with another fillo rectangle and sprinkle with icing sugar.
