METHOD:
Place tomato, onion, basil and half the balsamic vinegar in a bowl, season with salt and pepper, toss to combine.
Toast muffins until golden brown.
Divide tomato mixture over toasted muffins and arrange bocconcini on top; drizzle with remaining balsamic vinegar, season with ground pepper.
